Butternut Squash Soup with Apple Chutney & Croutons for Two
As the days grow colder, nothing warms up the insides better than a bowl of butternut soup with rich apple chutney and crunchy croutons. Make sure to have your woolly sweater and socks on for full effect.
Cooking Tip: Just heat soup gently and top with a dollop of chutney and the croutons (chutney is not to be heated but rather served cold).
Soup Ingredients: Butternut squash, chicken stock, potatoes, onions, carrots, celery, garlic, apple, star anise, cinnamon, nutmeg, salt & pepper, white wine & butter.
Apple Chutney: apple, coconut milk, turmeric, ground cumin, ground coriander, ginger, garlic, shallots, butter, nutmeg, allspice, cinnamon, apple juice, yogurt, parsley.
