The BEST way to enjoy a bone-in rib steak with all of it's marbling is to have it aged for a period of time (ideally minimum of 28 days).  This aging process helps to relax the muscle fibres in the meat and reduce the water content, which gives this cut of beef a much richer flavour.  This is why Barberian's signature cut is the Bone-In, Dry Aged Rib Steak - aged to perfection.

Dry Aged Bone In Rib Steak Dinner for Two

1. Bone In Dry Aged Rib Steak 24 oz x 1 : Our Rib Steaks are dry aged in house for 28 days minimum and hand cut by our experienced butcher team.

2. Heirloom Tomato & Onion Salad with Blue Cheese Topping and Dijon Vinaigrette: Heirloom Tomato Salad served with red onion, bed of field greens and some dijon vinaigrette dressing & blue cheese topping on the side.

Dijon Dressing Ingredients: Dijon mustard, olive oil, canola oil, white wine vinegar, salt & pepper.

Blue Cheese Dressing Ingredients: Olive oil, vegetable oil, pasteurized milk, salt, bacterial culture, calcium chloride, microbial enzyme, penicillium, roqueforti

Directions: 1. Take the first tomato and slice into even slices and the other in more rustic/rough pieces.
2. Season with pepper and salt.
3. Place the mix greens on a plate and drizzle some of the Dijon vinaigrette over the greens.
4. Arrange the tomatoes over the greens.
5. Place the sliced red onions over the tomatoes.
6. Finish with the dressing(s). You can choose to use both dressings or just one.

3. Mixed Vegetables for the Grill in Foil (Corn on the cob, Portobello mushrooms, red and green onions, thyme and Barberian's steak spice).Harry's Cooking Tips

Grill method:1. Place foil package directly on hot grill. 2. Cook for 8-10 minutes flipping a couple of times to avoid burning. 3. Set aside to a warm side of the grill until ready to serve.

Oven method1. Preheat oven at 400F 2. Place foil package on baking sheet to catch any drippings 3. Cook for 10-12 minutes flipping once or twice to avoid burning one side. 4. Keep warm until ready to serve. 
5. If you like more of a charred or caramelized finish you can remove the vegetables from the foil and place on baking sheet or a hot pan. Time for this final touch depends on the method.  Keep and eye on it to not burn them.

4. Chocolate Mousse x 2: Chocolate Mousse Ingredients: Dark chocolate, egg yolk, heavy cream, sugar, raspberries 

Refrigerate until serve.
